Ingredientes y elaboración
100g de crema de leche (mínimo 15% grasa).
50g de queso Idiazábal rallado.
300g de escarola.
Una cucharada sopera de aceite de oliva virgen extra.
Unas gotas de limón.
Calentamos la crema de leche junto al queso rallado hasta conseguir una textura ligeramente espesa. Reservamos.
Aliñamos las hojas de escarola con una cucharada sopera de aceite de oliva virgen extra y unas gotas de limón.
Colocamos en el plato una porción de la crema de Idiazábal y la estiramos. Disponemos sobre la misma las croquetas de jamón y acompañamos con la ensalada de escarola.
